The application process was very similar to a University application and Emily had to send off her CV, a personal statement and portfolio. Emily will study patisserie and during the course and will complete three diplomas – basic, intermediate and advanced patisserie. Emily plans to apply to go to University but may take up a Le Cordon Bleu work placement in Paris if offered the opportunity. After Heathfield and her time in the patisserie capital of the world Emily hopes to open her own cake company either in Paris or England.
